Offal from The Chop Shop Butchery is fresher, better handled, and sourced from higher-welfare animals. At The Chop Shop Butchery, our offal is prepared to ensure quality, hygiene, and proper trimming. Supermarket offal may sit for longer. 

Fresh offal is highly perishable. It should be cooked within 1–2 days of purchase when stored in the fridge at 0–4°C. If you're not using it right away, freeze it immediately to preserve quality. Most offal freezes well for up to 3 months - just make sure to defrost slowly in the fridge before cooking. 

This varies by type. Refer to cooking guidelines. Offal, like liver and kidneys, should be cooked to an internal temperature of 75°C (167°F) to ensure it is safe to eat. This temperature should be maintained until the juices run clear and there is no pink or red meat visible. 

Cooked offal should be cooled quickly and stored in an airtight container in the fridge. Consume within 2–3 days for best quality. Reheat thoroughly, ideally to 74°C, but avoid multiple reheats to maintain texture and flavour. You can also freeze cooked offal dishes for up to 2 months.
